It’s easy to get ambitious with the amount of time we think campsite setup will take. Throw feeding a tired and hungry family into the mix and you’ve got a real-life assessment in Time Management 101. Luckily, we’ve thought through how to ace the test every time. Consider this your cheat sheet for delightful campsite cooking when time is of the essence.
These recipes are designed to yield meals that are easy to prepare and delicious to eat. When it comes to campsite cooking, Togo RV has you covered. Preparing simple meals that taste great is easier than you think.
Prep Like a Pro
Plan and prep ahead of time.
Due to the limited storage space of RV kitchens, planning ahead is key. Before you set out, take into account how you will transport and store the appliances and ingredients necessary for your travel menu. Prevent the panic of forgetting an ingredient by mapping out your meals ahead of time.
- Determine the menu for each day of your trip.
- Shop for all ingredients ahead of time.
- Get a head start on food prep by pre-chopping and pre-measuring when possible.
Some recipes require more ingredients than others, so consider your storage space when organizing your menu. Assess how much room you have in your refrigerator and pantry to ensure you will be able to securely store all necessary ingredients.
Blueberry Banana Pancakes
These pancakes are great for camping because they’re packed full of nutrition to keep you going on the trails. Adding berries gives these an antioxidant boost and they’re easy to make on a stovetop or over the campfire.
TOGO RV TIP — Save time by preparing the batter beforehand and refrigerating it until you are ready to pour.
- 1 cup flour
- 1 cup milk (or 1/3 cup powdered milk + 1 cup water)
- 1 tsp. baking powder
- 1/4 tsp. salt
- 1 egg
- 1 banana, sliced into 1/4” pieces
- 1/2 cup blueberries (fresh or frozen)
- 6 teaspoons butter
Combine flour, milk, baking powder, and salt in a plastic bag and store refrigerated or in a cooler until you are ready to cook. Then you can easily combine fruit, chocolate chips, or any other extras for your pancakes.
Step 1: Combine flour, milk, baking powder, and salt in a bowl.
Step 2: Add egg to the dry ingredients.
Step 3: Whisk the ingredients to combine, making sure not to over mix (a few lumps are okay).
Step 4: Heat a skillet over stove or campfire. Add butter to coat the pan.
Step 5: Pour 1/3 cup of batter into the skillet and scatter some blueberries and banana slices on top.
Step 6: Cook until top begins to bubble and sides are set (2-3 minutes).
Step 7: Flip the pancake and cook the other side until golden.
Step 8: Repeat with the rest of the batter, adding 1 tsp. of butter into the pan for each pancake (as needed).
Biscuits and Gravy
It may be the classic feel of a biscuit in the morning, or the use of a cast iron skillet over an open flame, but something about biscuits and gravy makes them feel like an outdoor breakfast staple. Using frozen biscuits and only a couple more ingredients, this crowd favorite requires minimal prep and is sure to fill up the whole family.
This single skillet recipe makes cleanup a breeze—with just one pan you can brown sausage and cook gravy. This means fewer pots to wash, less time putting things away, and more time to explore the outdoors!
TOGO RV TIP — Having multiple cooks can help expedite the cooking time. One person can brown the sausage and cook the gravy while another prepares the biscuits.
- Frozen biscuits
- 1lb of sausage
- Butter (or oil)
- Salt and pepper
Step 1: Cook biscuits in your oven according to directions on the bag. Set a timer so you don't forget them. No one likes burned biscuits and gravy.
Step 2: Brown sausage in a large skillet. Break it up into small pieces with your spatula while cooking.
Step 3: Once meat is browned, move to edge of pan to create some room in the middle of the pan. Use any grease cooked out of the sausage and supplement with a pat of butter. Add flour to grease/butter mixture, enough to soak up all grease/butter, and sprinkle a pinch or two of flour over the ground sausage. Mix and cook until flour is browned.
Step 4: Pour enough milk into the sausage mixture to fill the pan a little more than halfway.
Step 5: Increase heat to medium high or high, stirring constantly. When the mixture reaches a near boil, turn heat down to medium and continue to stir in order to keep gravy from sticking to the bottom of the pan.
Step 6: Salt and pepper to taste. We recommend a little bit of salt and a lot of pepper!
Step 7: Continue stirring until gravy cooks down to desired thickness.
Step 8: Pour gravy over biscuits and enjoy!
One & Done
Pesto Chicken and Veggie Foil Pack
This is a healthy and exquisite take on a classic campground dinner. Easy to prepare, easy to cook, amazing to devour. This low-hassle meal option is one that can be easily prepared in advance and placed on the coals on your time.
Because everything is prepared on tin foil, cleanup is quick. All you need are some utensils to ensure that everyone can dig in.
TOGO RV TIP — Prepare the tin foil pack with all of your ingredients in advance and keep refrigerated. When the time comes to start cooking, all you will need to do is throw them on the campfire.
This recipe is great when there are multiple cooks in the kitchen. Bring the group together by assigning everyone an ingredient to prep for the tin foil packs. One person can cut veggies while another prepares the chicken. Someone else can prepare potatoes, and soon cooking becomes a team effort.
- 2 large chicken breasts, sliced horizontally into 4 equal-sized pieces
- 2 cups small potatoes, quartered
- 1 large bell pepper, thinly sliced
- 1 yellow onion, cut into rings
- 1 large carrot, cut into matchsticks
- 2 tbsp. minced garlic (or 1 tsp garlic powder)
- 1/4 cup olive oil
- 2 tbsp. Italian seasoning
- Salt & pepper to taste
- Lemon, parmesan cheese (optional)
Step 1: Preheat oven or grill to 425 degrees or make sure that the campfire coals are hot and that flames are low.
Step 2: In a very large bowl, mix all ingredients together and evenly coat with oil and seasoning.
Step 3: Set out 4 large sheets of foil.
Step 4: Divide mixture evenly, ensuring each foil pack gets 1 piece of chicken.
Step 5: Seal the foil and bake or grill for 30 minutes or until chicken is cooked through (reaches 165 degrees inside).
Step 6: Let foil packs cool down and serve.
Grilled Peaches and Cream
Is there a better combo? The recipe gives you the freedom to choose how your peaches are prepared. Simply place the peaches over an open campfire or grill them to your liking. All you have to worry about with this recipe is where you're going to enjoy it!
TOGO RV TIP — If you purchase peaches before you travel, make sure to store them at room temperature. An open environment, like a countertop, works best.
- 2 fresh peaches
- 1 tablespoon oil
- 2 scoops vanilla ice cream
- 1 tbsp. butter
- 1 tbsp. brown sugar
- 1/4 cup bourbon (or 2 tsp. vanilla extract)
Step 1: Heat grill (or stovetop griddle) to medium-high.
Step 2: Halve peaches and remove pits.
Step 3: Brush interior side of peaches with oil.
Step 4: Lay peaches facedown on the grill for 3-5 minutes (until softened throughout).
Step 5: While peaches are grilling, bring butter, bourbon, and sugar to a soft boil and simmer over low heat. Stir occasionally until mixture thickens (about 5 minutes).
Step 6: Place peaches on a plate, top each with a scoop of ice cream, and drizzle with the brown sugar bourbon sauce.
